Mexican cuisine, known for its flavors and variety, can be traced back through at least 10,000 years of Mexican agricultural practices.

Our Mexican ancestors, who were hunter-gatherers, were the source of our first cooking techniques, such as the selection of ingredients, dehydration, charring and grinding, among others. As the years progressed, these methods were gradually transformed but remained true to their origins, which continue to be of vital importance to this day.

Some of the key crops that are the basis of traditional Mexican cuisine are corn, beans, chili peppers, amaranth, chia, vanilla and cocoa, among others. They can be found all over Mexico.

Today, Mexican cuisine allows us to explore a large variety of new sensations and flavors, due to the fact that it uses all of the natural and cultural diversity that exists within the country.

By combining traditional Mexican cuisine with new and creative culinary inventions, we can say that Mexican cuisine is as old as time and as new as today.
